This is a quick favourite of mine. I call it my “in a rush meal’ it is delicious and very low syns if you are on Slimming world. Birds Eye Inspirations, veg and new potatoes
- Birds Eye Inspirations Fish (There are a few different flavours to choose from)
- Green Beans
- New potatoes
The birds eye fish is frozen and it takes 30 minutes to cook in the oven. So warm up the oven and put the fish in for 30 minutes.
Whilst the fish is cooking cut the ends off the green beans, slice the peppers thinly, slice the carrots thinly and put the new potatoes on the boil.
Once the fish has about 10 minutes left, throw the veg in the wok to soften, I add a bit of honey and some balsamic vinegar. Once the veg is soft enough for you, take out of the wok and plate up.
Strain the potatoes, take the fish out and lay on top of the veg and….. EAT!
This is a quick and easy meal to cook. Even better there isn’t a lot of washing up to do after.
